Las Vegas just got a lot more Korean and luxurious.
Simon Kim — the restaurateur behind New York’s Michelin-starred COTE Korean Steakhouse — has officially opened his long-awaited Vegas location inside The Venetian. This isn’t just another expansion; it’s a full-on Vegas experience that blends fine dining, nightlife, and Korean barbecue culture in one dazzling setting.
COTE, which first opened in New York’s Flatiron District in 2017, quickly became a game-changer in the world of Korean barbecue — earning a Michelin star in 2018 for its innovative blend of Korean techniques and American steakhouse elegance.
Now, COTE Las Vegas brings that same prestige to the Strip. Designed by the Rockwell Group, the new 17,000-square-foot restaurant features golden ceilings, glowing blue-and-red staircases, and a glass-encased skybox with a DJ booth, setting the tone for a uniquely “Vegas” dining experience.
At opening, the menu featured COTE’s signature Butcher’s Feast ($88.88 per person), an indulgent lineup of USDA Prime and American wagyu cuts, accompanied by banchan, kimchi stews, and vanilla soft serve with soy sauce caramel. For true steak enthusiasts, the Wagyu Omakase ($225) offers a curated tasting of premium dry-aged cuts, including A5 Wagyu from Japan’s Miyazaki, Sendai, and Kobe regions.
Vegas-exclusive items at launch included the Blackjack Sandwich, made with A5 wagyu, black truffle, and truffle aioli — and a $198 build-your-own gimbap set featuring caviar, uni, and bluefin tuna.
COTE’s drink menu is equally extravagant, featuring fine wines, craft cocktails (like the “King” and “Nectar of the Gods”), premium soju, and even ginseng-based drinks for those late Vegas nights.
For Simon Kim, this Vegas opening marks a homecoming — he studied hospitality at UNLV and began his career with MGM Resorts. “Vegas was always part of COTE’s DNA,” he says. “Here, we can take creativity and immersiveness to another level.”
